HI, all,
Do try the rarebit again...it is delicious. I serve it over a bowl of nice bread, cut as for fondue, with steamed broccoli and some nice red bell pepper strips. Quick, pretty inexpensive and really good on a winter night.
Here are my notes: Use a double boiler and cook out the roux first, beat the egg into the beer and thin the roux with this, then melt in the cheese. Foolproof.

Hey there ya'll,

Okey dokey...yeah, the Welsh Rarebit is not on my list of things to try again. It might have been the stringiness, or the saltiness, but overall, it just klled my appetite. I thought it would be reminiscnet of a grilled cheese sandwich, and in person, it certainly looked like an open face grilled cheese sandwich that had been dipped in tomato soup (Yummm!)... But, in the end, I just couldn't finish it. Wendi's cheese choice was excellent, though. I'd like to munch on that all by itself. ~K~
